Eggplant Salad Recipe

Eggplant Salad recipe.
Ingredients:
1 lb Peeled eggplant, cubed
1 lb Tomatoes, chopped
2 tsp Cayenne
1 tsp Salt
1 tbl Olive oil
1 tbl Tomato juice
Preparation:
Boil eggplant in water for 30 minutes. Drain well and squeeze out excess moisture.
In a large skillet over moderate heat, saute eggplant, tomatoes, cayenne and salt in olive oil and tomato juice for about 5 minutes, mashing with a fork until somewhat smooth.
Chill before serving. Serves 4.

Country Chicken Nuggets Recipe

Country Chicken Nuggets Appetizer recipe.
Ingredients :
1 cup cornflake crumbs
1 1/2 tsp oregano
1 1/2 tsp thyme
2 whl chicken breasts without skin cut into 1″ pieces
1/2 cup butter or margarine melted
SAUCE
1 cup sour cream
2 tbl dijon mustard
1 tbl milk
Preparation:
Heat oven to 425. In a small bowl stir together corn flake crumbs, oregano and thyme.
